Snickers {raw, vegan AMAZE-ingness}

Yup. You read that right.

A homemade snickers bar that will satisfy the most ravenous sweet tooth without leaving you snoring on the couch.

Snickers {raw, vegan}

ingredients

** Cookie ** 1 c. almonds 1 c. cashews 1 c. dates, soaked 1/2 c. oats 1/4 tsp. salt

** Caramel ** 1/3 c. almond butter, raw + unsalted 1/2 c. coconut oil, melted 1/2 c. maple syrup 1 t. vanilla extract pinch salt 1/2 c. peanuts or pecans, chopped {optional}

** Chocolate Sauce ** 1/2 c. coconut oil, melted 1/4 c. + 2 T. maple syrup, agave or honey 2/3 c. raw cacao powder

method

To make the crust: Process almonds, cashews and oats separately in a food processor until each are ground into flour. Pulse all flours in the food processor with salt until combined. Add dates, one at a time, until dough becomes slightly moist and holds together when you pinch it between your fingers.

Press into a 9x13 pan and place in freezer while you make the caramel.

To make the caramel: Process all ingredients, except 1/2 c. peanuts or pecans, in VitaMix until smooth and creamy.  Pour caramel over cookie crust and smooth out so entire cookie is covered. Top with chopped nuts. Place back in freezer for 20-30 minutes while you make the chocolate.

To make chocolate: Process oil and sweetener in VitaMix until well-combined. Add in cacao powder and blender until smooth and shiny :)  Pour chocolate over the caramel to cover entire top of cookie. Place back in freezer for 2 hours before slicing and serving.
