Red Pepper Coconut Curry Soup (raw, simple& yum!!!!)
Just made this delicious raw soup - you can warm on stovetop if you like but it is crazy good just at room temp! I used my vitamix and bought the coconut already opened from whole foods so it was super easy!!
** Serves two
- The water and flesh from one young Thai coconut (about 1c. Coconut water and 1c. Coconut meat if you're buying separately)
- 1 red bell pepper, chopped
- 1 minced garlic clove
- 1 1/2 tsp. minced ginger
- 1 tsp. curry powder
- Juice from 1/2-1 lemon (I used half but then added a little more!)
- 1/2 tsp. miso paste (recipe called for white but I used red...I think either works great!)
- Celtic Sea Salt to taste
- Chopped cilantro
Mix everything in blender except cilantro until you reach desired consistency (with vitamix I ended up blending for about 1 minute). Top with chopped cilantro.
***if you really want to pack in the nutrients add in some leafy greens (lightly cooked or raw if you're heating up soup as that will naturally cook them), like collard greens, kale, spinach or mustard greens. I even added wakame flakes - a sea vegetable found in the Asian aisle at the market. Sea vegetables are nutrient-rich veggies that help regulate the thyroid, the colon and help with stress too!!!
