Healthy Go-To Fruit+Nut Bar

For anyone that finds themselves constantly on the go, running from one thing to the next this is the perfect snack for you {and the kiddos :)}.  It takes about 15 minutes to whip up and then simply pop in freezer until you need that quick pick-me-up or snack on-the-run.  Feel free to play around with the nut & seed variety and dried fruit - just make sure you always keep the total overall quantities the same. This is a great recipe to make with the kids!  Enjoy :) DSC_0165

Ingredients 1 cup gluten-free oats 1 1/2 cups raw almonds 1 cup dried blueberries 1/4 cup raw pistachios 3/4 cup raw pecans 2/3 cup raw cashews 2/3 cups raw pumpkin seeds 1/2 cup raw sunflower seeds 2/3 cup ground golden flax 2 cups raw nut butter of choice {peanut, almond, cashew, tahini, walnut, etc.} 1/2 cup unsweetened applesauce 2/3 cup raw honey 1 Tbsp. cinnamon

Method Line 13x9 inch pan with parchment paper.

In food processor coarsely chop all nuts and seeds. Pour into bowl and set aside.

Mix nut butter, applesauce and honey in a bowl. Add to bowl with nut & seed mixture and mix until well-combined. Stir in oats and dried fruit.

Press mixture into prepared pan and freezer for 30-60 minutes before cutting. Store in freezer or fridge until ready to grab!
