Coconut Carob Chip Cookies (Vegan, no refined sugars or fats)

I made these cookies a few weeks back to bring to my newly found vegan friends - Jen and Dave.  Since I was gearing up to move I wanted to use up what I had in my pantry so ended up just creating these tasty little treats with what was on hand.  I was a bit nervous as to how they'd turn out without any sugar in the house but I am so happy to say they were delicious and the whole party loved them!  (Unfortunately Dave and Greg got to them first and I think may have eaten half the plate ;-))  They are super super easy to make and only make 1 dozen so it's a great treat to make if you're craving something a little sweet...enjoy!

**Makes a dozen cookies**

 

Ingredients:

1 c. + 2tablespoons all-purpose flour (can sub with gluten free flour)

2tablespoons coconut flour

3/4t. baking soda

1/2t. baking powder

1/4t. salt

3/4c. + 1tablespoon pure maple syrup

6tablespoons coconut oil

1t. vanilla

1tablespoon coconut milk

2tablespoons ground flaxseed mixed with 3tablespoons warm water

1/2c. unsweetened shredded coconut

3/4c. carob chips (could sub for vegan chocolate chips)

 

Mix all dry ingredients together in a bowl except shredded coconut and carob chips.  In a separate bowl milk all wet ingredients together.  Add flour mixture to wet ingredients and mix until well incorporated.  Stir in shredded coconut and carob chips.

Drop by rounded teaspoons on baking sheet lined with parchment paper, bake at 350 for 12 minutes.
