Best. Whipped Cream. Ever. {dairy-free to boot!}

This is one of those recipes that once you try it,  I can't imagine you'll ever go back to the store-bought varieties. It is just way too simple, not to mention - Wildly. Delicious.  Use it to top hot chocolate, oatmeal or pancakes like I did this morning. So Yum!!

{dairy-free} Whipped Cream

ingredients:

1 can full fat coconut milk*

1-2 tablespoons 100% pure maple syrup, honey or brown rice syrup

1-2 teaspoons pure vanilla extract or powder

method:

Place can of coconut milk in fridge for 8hours or longer.  Remove from fridge and turn can upside down.  Open and pour off the coconut milk/water that is on the top and set aside to use for another recipe.  What is left in the can is the luscious creamed coconut; Scoop out and place in metal bowl with 1 Tablespoon of liquid sweetener and 1 teaspoon of vanilla.  Mix using a hand mixer until light and fluffy.  If the whipped cream still has a strong coconut flavor, add additional sweetener and vanilla to taste.

*I use Thai Kitchen and Native Forest brands.  Should just be 2-3 ingredients: coconut, water and possibly guar gum, but ideally just coconut and water.  Nothing else!
