5-minute Peanut Butter Chocolate Cookies

Yes peanut butter and chocolate can be healthy!  Well I mean if you use pure chocolate and organic peanut butter - or any nut butter for that matter - and fresh medjool dates, you can't get much more wholesome for a cookie or quick snack on the go.

This is a dessert the whole family will love and you won't feel guilty going back for seconds...or thirds ;-)


No-bake Peanut Butter Cookies


  • 1 cup almond flour or meal
  • 1 cup pitted medjool dates
  • ½ cup organic no-salt added peanut butter {you can substitute with any nut butter!}
  • 1½ teaspoons pure vanilla extract
  • Sea salt to taste
  • 1/2 cup dark chocolate chips {I used dairy-free}
  • Optional: additional chocolate chips, shredded coconut or chopped nuts


  1. Place sheet of parchment paper on cookie sheet.
  2. Combine all ingredients in a food processor until dough forms in to ball.
  3. Form dough into golf-ball sized portions.  Place on parchment paper and push down with palm of hand to flatten into a cookie shape.  Take a fork and press criss-crossed impressions in top of dough.
  4. Place cookies in freezer for 5-10 minutes.
  5. While cookies are in freezer, melt 1/2 cup chocolate chips.  Remove cookies from freezer and dip half of cookie in chocolate or drizzle chocolate over top - or do both!!
  6. Place back in freezer for 5-10 minutes until chocolate hardens.
  7. Store in freezer and go back at any time for seconds :)
